Start by peeling the tomatoes. Bring a pot of water to a boil and make a small X-shaped incision at the bottom of each tomato. Carefully place the tomatoes into the boiling water for about 30 seconds until the skin begins to peel away. Then, transfer them to a bowl of ice water to stop the cooking process. Once cooled, peel and dice the tomatoes.
Dice the green bell pepper and the red onion.
In a large salad bowl, combine the diced tomatoes, green pepper, and red onion. Add the minced garlic.
