This stew can be prepared with various types of meat and vegetables (such as peas, cauliflower, green beans, etc.). It’s a staple dish in Tunisia, typically eaten with your fingers and bread!
Slice the onion into rounds and sauté it briefly in a little NARA olive oil.
Add the tomato paste, ZEYNA harissa, salt, and ZEYNA Tabel & Karouia to the chicken. stir-fry everything for about two minutes over medium heat, without adding water.
Add approximately 1.5 liters of very hot water (the water should cover the chicken).
Add the peeled and halved potatoes lengthwise, as well as the peppers.
Let it cook covered over high heat for 40 minutes until the water has reduced by half and the stew has thickened. Add the chopped garlic and let it cook for an additional 5 minutes over low heat.
The oil should rise to the surface.
Serve and enjoy hot with bread.
