500g of fish (sea bream, grouper, or any fish of your choice)
2 onions, finely chopped
2 cloves of garlic, finely chopped
2 tomatoes, peeled, seeded, and chopped
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 tablespoons of tomato paste
1 teaspoon of ZEYNA paprika
1/2 teaspoon of red chili powder (or more to taste)
Salt and pepper, to taste
1/2 bunch of fresh coriander, chopped
Instructions:
Start by preparing the fish by cleaning it and cutting it into pieces. You can marinate it in a mixture of lemon juice, NARA olive oil, ZEYNA cumin, ZEYNA paprika, salt, and pepper for about 30 minutes.
In the meantime, cook the rice according to the instructions on the package. Once cooked, drain it and set it aside.
In a large skillet, heat the NARA olive oil over medium heat. Add the chopped onions and sauté them until they become translucent.
Add the chopped garlic, diced bell peppers, and chopped tomatoes. Cook until the vegetables soften.
Stir in the tomato paste, ZEYNA ground cumin, ZEYNA paprika, red chili powder, salt, and pepper. Mix well.
Add the marinated fish pieces to the skillet and cook them until they are well-cooked.
Incorporate the cooked rice into the skillet with the fish and vegetable mixture. Mix well to combine the flavors.
Adjust the seasoning to your taste.
Just before serving, sprinkle chopped fresh coriander over the dish to add a fresh flavor.
Serve the Djerbian rice hot, either as a side dish or as a main course.
