For the filling:

Preparation:

  1. In a large mixing bowl, combine the flour, granulated sugar, salt, and melted butter until you have a sandy texture.
  2. Add the ZEYNA orange water and gradually add water while kneading until the dough becomes smooth and homogeneous. Form the dough into a ball, cover it with plastic wrap, and let it rest for about 30 minutes.
  3. While waiting, prepare the filling by mixing the ground almonds, granulated sugar, ZEYNA cinnamon, and ZEYNA orange water until you have a thick paste.
  4. Preheat your oven to 180°C (350°F).
  5. Divide the dough into small portions the size of a walnut. Using your hands, form small flat circles of dough.
  6. Place a small amount of filling in the center of each dough circle. Fold the dough to form half-circles and seal the edges well to prevent the filling from escaping.
  7. Place the “Rkayeb Laazouza” on a baking sheet lined with parchment paper.
  8. Bake them in the preheated oven for about 15 to 20 minutes or until they are lightly golden.
  9. Remove them from the oven and let them cool completely.

The “Rkayeb Laazouza” are ready to be enjoyed. Serve them with a good cup of mint tea for an authentic Tunisian experience. Enjoy your meal!
